Terada Honke is a centuries-old sake brewery in Kōzaki, Chiba prefecture, making sake by traditional kimoto methods with native yeasts, no additives, and minimal polishing. The Daigo no Shizuku and Katori bottlings are reference sakes for natural-wine drinkers crossing into Japanese fermentation.
