Patrick Piuze, originally from Quebec, set up his Chablis négociant operation in 2008 and sources from organic and sustainable growers across the appellation. He bottles parcel by parcel rather than blending — Terroir de Chablis, Terroir de Chichée, plus single premier and grand cru sites — and has become one of the most reliable Chablis references in the modern era.
