Beaune, Catharina Sadde — DRC and Angerville-trained, biodynamic since 2019.

Les Horées was founded in 2019 by Catharina Sadde, a German-born former chef who trained at Geisenheim and apprenticed at Domaine de la Romanée-Conti, Domaine Marquis d'Angerville, and Domaine Cécile Tremblay. Working with her husband Guilhem from a Beaune cellar, she farms 1.56 hectares across Beaune, Pommard, and Volnay biodynamically and also sources from biodynamic growers; whole-bunch fermentation, indigenous yeasts, minimal sulfur. The name references the Greek goddesses of the seasons.
