Jean-Michel Stéphan is one of the most uncompromising natural-wine producers in Côte-Rôtie, working old Syrah and Viognier vines biodynamically, fermenting whole-cluster, and bottling with little or no added sulfur. Cuvées are often released years after the vintage.
