David Hirsch planted his ridge above Cazadero in 1980, eight miles from the Pacific, and Hirsch Vineyards became the originating site of what is now called the True Sonoma Coast. Across decades the Hirsch Pinot Noirs and Chardonnays have remained reference wines for cool-climate California — savory, structured, slow to evolve.
