Evening Land's flagship Seven Springs Vineyard sits in the Eola-Amity Hills AVA of Oregon's Willamette Valley. Under winemaker Sashi Moorman and partner Rajat Parr, the Pinot Noirs and Chardonnays — especially the La Source and Summum bottlings — became some of the structural references for a more restrained, Burgundian Oregon style.
