Pascal Cotat — and his cousin François — work tiny parcels in Sancerre (Les Monts Damnés, La Grande Côte, Les Culs de Beaujeu), making Sauvignon Blancs in old wood and bottling by hand. The wines age unusually long for the appellation and are stylistic outliers from the typical Sancerre commercial style.
