Biodynamic Pouilly-Fumé from horse-plowed limestone.
Bain works a small holding in Pouilly-sur-Loire on biodynamic and organic principles, plowing with draft horses and fermenting with native yeasts. His Sauvignon Blancs were declassified by the Pouilly-Fumé appellation for stylistic reasons before later being reinstated; they remain reference points for natural Loire whites.
